Fresh Caprese Skewers

Fresh mozzarella, basil and cherry tomatoes balance this quick and easy-to-make appetizer.

 1 cup Balsamic Vinegar
 1 Cherry Tomatoes (clamshell)
 1 Mozzarella Balls (small)
 Basil Leaves (fresh, chopped)
 Salt (to taste)
 Ground Black Pepper (to taste)
 Cocktail Toothpicks
Preparation

Bring balsamic vinegar up to a boil in a small saucepan, then lower heat to medium and simmer until it's the consistency of very thin maple syrup, about 10 minutes. Pour into a bowl and let cool.

Cut cherry tomatoes in half. Thread a mini mozzarella cheese ball, basil leaf and a cherry tomato half onto a tooth pick. Repeat with remaining ingredients. Sprinkle with salt & pepper, then drizzle cooled balsamic reduction on top.

Repeat the process for however many skewers you are making. Place on a platter and get creative with the placement of more balsamic reduction.
