Breakfast Egg Cups

Meal prep? Breakfast on the go? Hungover? These egg cups are simple, nutritious and a breeze to put together.

 5 Eggs (brown or white)
 2 pinches Salt (to taste)
 2 pinches Ground Black Pepper (to taste)
 Spinach (finely chopped)
 Tomato (chopped)
 Onion (red or white, chopped)
 1 Bell Pepper (red or green, chopped)
 1 Broccoli Crown (cut into small florets)
 Parmesan Cheese
 Cheddar Cheese
Preparation

Preheat oven to 350F degrees.

In a measuring cup, beat the eggs until smooth. Set aside.

In a greased muffin tin, place your desired combination of fillings into each muffin cup. Be sure not to overfill. The egg mixture will expand as it bakes so be sure to leave some room.

Season each cup with salt and pepper to taste. If you're craving a bit of a kick, a dash of paprika will do the trick.

Pour the beaten egg mixture into each muffin cup until the liquid almost reaches the top.

Bake for approximately 20 minutes, until set. Enjoy!

Not too much to plating this grab 'n go recipe. Drizzle sriracha or Frank's Red Hot for an extra kick that'll surely wake you up.
