Crispy Tofu Nuggets

Here is a tofu twist on an all time classic. You can't go wrong with these crispy nuggets. They're the perfect guilt-free snack that you can dress up or down.

 1 Extra Firm Tofu (block, pressed)
 ½ cup Vegetable Broth
 1 tbsp Soy Sauce
 ½ cup All Purpose Flour (GF 1 to 1 substitute works)
 2 Eggs
 1 cup Panko Bread Crumbs
 2 tsp Garlic Powder
 2 tsp Onion Powder
 ½ tsp Cayenne Pepper
 ¼ tsp Salt
 ¼ tsp Ground Black Pepper
Preparation

Preheat the oven to 400F degrees. Line a baking sheet with parchment paper.

Slice the tofu into 10 squares. You can do this by cutting the tofu into 5 slices along the longer edge, then cut each column in half to make squares. Lightly press each slice of tofu with paper towel to remove some of the liquid. Alternatively, you can place the paper towel on the tofu and place a heavy pan or plate on top.

To make the marinade, stir together the vegetable broth and soy sauce in a shallow pan. Marinate the sliced tofu in the vegetable broth mixture for approximately ten minutes.

For the next step, you'll need to prepare three bowls. One with the flour, one with the panko bread crumbs and spices, and one with the egg mixture. Coat the tofu in the flour, then the egg mixture and finally, the panko crumbs. Make sure to coat evenly.

Bake at 400F degrees for approximately 15 minutes. Carefully flip the tofu nuggets over and bake for another 15 minutes. Check for a golden brown colour and crispiness to ensure they're ready.

Enjoy these tofu nuggets with a garlic aioli or traditional ketchup. To spice things up, try making sriracha mayo to accompany the nuggets.
